Fish and vegetables
Get Basa fillet (mine is 240 gm) and marinate it with masala paste ( add salt pepper yellow mustard paste turmeric chilli powder or spice as per your taste) for 30-60 minutes. On a pre heated pan add drops of mustard oil and 2-3 curry leaves and place the fish skin side. Let it cook for 3-5 minutes on high heat ( depends on thickness) once you touch the fish on the top ( opposit the skin side) and feel the heat and it seems cooked 80% just turn the heat on low and flip it and cook for another minute or so. And remove it from the pan . Now in same pan sauté vegetables of your choice with salt pepper lime and choice of your own spices with drops of oil / ghee. Keep them crunchy and enjoy simple fine dining dish.
