Tasty & quick mango rabdi from leftover rotis

Ingredients

  • listcheck5gm ghee
  • listcheckRotis made from 30gm wheat flour
  • listcheck150gm ripe mango
  • listcheck150ml cow milk
  • listcheckStevia/sweetener
  • listcheck10gm cashews
  • listcheck0.5 tbsp chia seeds
  • listcheckFew drops of mango essence
  • Method

  • Step-1
    Tear the rotis in small pieces. In a nonstick pan, add half the ghee and fry the rotis.
  • Step-2
    Take out the rotis in a blender, add 1/4the milk, add chopped mango pieces (keep some for garnishing) and blend well.
  • Step-3
    In the same nonstick pan, add ghee, roast cashews and add milk. Put in low flame and let it thicken a bit. Now add the roti & mango pulp in this. Mix really well for a few minutes.
  • Step-4
    Add stevia/sweetener as per choice. Now add mango essence drops. Stir well. In the last step, add the chia seeds.
  • Step-5
    Take them out in a bowl and freeze them for 10mins. Take it out, add remaining cashews and mango. Enjoy your dessert!
