This is a quick and easy Mediterranean salad which requires least amount of cooking. Also great for Meal Preps

Ingredients

  • listcheck50g Quinoa
  • listcheck50g Chickpeas
  • listcheck100g veggies - red and yellow peppers, small onion, coriander
  • listcheck5g Olive Oil
  • listcheckJuice of a lime
  • listcheckOne clove of garlic crushed
  • listcheckSalt as needed
  • listcheckAny other herbs if you like - dried Parsley goes well
  • Method

  • Step-1
    Boil Quinoa as per packet instructions
  • Step-2
    Boil soaked chickpeas in pressure cooker - 7 whistles
  • Step-3
    Meanwhile finely chop the vegetables and make the dressing in a small bowl - 5g olive oil, juice of one lime, crushed garlic and pinch of salt. Mix well
  • Step-4
    Once the Chickpeas and Quinoa are ready add all veggies and the dressing.
  • Step-5
    Done. Eat right away or store in the fridge to consume later. You could also add feta cheese at the time of eating if it fits in your macros.
