Good Morning Healthy People, This is authentic and traditional dish. A bit time consuming but once you get hand of it, you know it's easy and tasty. It tastes better next day so ideally make it for dinner and left over will do as a breakfast. So two meal preps are sorted out. A welcome change to your regular Dal-Rice and subji. You must have heard Kareena Kapoor naming this dish in a movie 3 Idiots 😀😁.. Handvo... Dividing this dish into three parts.. Atta/flour or batter Fermentation Final recipe Atta/Flour or better : You can make fresh better like we do for Idli/dosa or can make flour and and store it up-to two months. From the same Atta you can make steamed Dhokla too.. To make Atta you need.. 4 cup Rice.. 1 1/4 cup mixdal (can make mix dal I.e. 1/2=Chanadal, 1/4=Uraddal, 1/2=Turdal etc..) You can grind it in your mixer jar or can get it done at nearby flour mill. Texture of the Atta should be neither like a regular Atta nor like a Suji, somewhat in between the two. Store it in a n airtight container. Fermentation : 2 cup Handvo/Dhokla atta 1/2 cup warm water 1/2 cup sour curd.. Mix Atta and water. Mix thoroughly and make it lump free and add curd, salt and turmeric powder. Keep the batter thick. Leave it for 7-8 hours in a warm place or until fermented. Final recipe prep Handvo.. *You can add choice of vegetables to it. Here I have added Lauki(bottle Guard), Carrot, Cabbage, fresh Methi.. *Add the vegetables to the fermented batter. *Add ginger garlic paste, roasted and coarsely ground peanuts, salt(for veges), 1/4 tsp baking soda.. * You can add lemon as per the taste you desire.. Or can skip too. *Make a paste with spicy chillies and jaggery (you can avoid jaggery and add choice of sweetner). Prepare a tadka with oil, Sesame seeds and dried red chillies.. *pour this in the batter n mix.save some tadka to pour over batter. *Pour this better to greased pan and let it bake at 170 degree for 50-60 minutes minutes.. *I have a sand cooker which is special cooker to bake handvo, but you can bake it in any baking dish/pan.. P. S. the above measurements are for reference purpose only. you can take as per your macros and make mini Handvo or even can make it in Appam pan.. Enjoy, stay Happy and Healthy.
