Good Afternoon Healthy People, Amritsari Chhole.. Jeera n SoYA Rice.. Toasted almonds and baby spinach salad with Tamarind dressing... SoYA Jeers Rice... Cook rice and SoYA granules separately (wash SoYA thoroughly and then squeeze out the water )... Now prepare a tadka with ghee/oil (as per macros) and add all whole spices.. Once it starts releasing it's aroma add good quantity jeera/cumin seeds and chopped green chilly and curry leaves. first add granules and saute for a while and then add rice.. Add salt.. Mix everything until combined.. It will taste good even without sabji.. You can even add sauted paneer n roasted almonds too for that good crunch.. Can add coriander too.. Tamarind Dressing: When you go off diet try this salad with typical Tamarind-dates-jaggery dressing, it just tastes awesome.. For now soak tamarind in warm water (do not add too much water) alternatively you can cook in pressure cooker too.. Once soaked/cooked, pass thru strainer.. Make the pulp ready... Add pinch salt, Stevia (optional) and red chilly powder(pinch) as per taste.. Can prepare savour dressing too.. Now cook this pulp for few minutes on slow flame... Once you see it starts thickening turn off the flame.. You can store this in the freezer up-to three months, you have to thaw before use it.. You can use this dressing for SoYA bhel or or any other bhel you make.. Roasted almonds with baby Spinach salad.. Roast the chopped almonds and keep it aside.. Wash baby spinach leaves and dry them. Completely... Take a big mixing bowl.. Add spinach, lettuce, carrot, few strand of beetroot, pinch salt and tamarind dressing as per taste.. Add almonds only when you about to eat to retain that lovely crunch.. Enjoy, stay Happy and Healthy...
