  • listchecksnapper 1 fillet
  • listcheckcorn
  • listcheckcapsicum
  • listcheckonions
  • listcheckred chilli flakes
  • listcheckolive oil
  • listchecksalt
  • listcheckquinoa
  • listcheckcarrot
  • listcheckpepper corns
  • listcheckcorriander

  • Method

  • Step-1
    marinate snapper in olive oil with pinch of salt and pepper( add herbs according to interests coriander goes well) for 15 mins
  • Step-2
    in roll boiling water add corn ,carrots boil for 2 mins then transfer them in chilled water
  • Step-3
    now in a grill pan add marinated snapper fry both sides for 3 mins then in the same pan add all the veggies and a dollop of low fat butter and coriander finely chopped,chill flakes,salt for quinoa fry quinoa for few seconds then add 1:2 water ratio and cool till fluffy. you can add flavor as per interest ( cinnamon goes well)

    now assemble everything in a plate and add lemon juice jst before serving
