How to make & Litti Chokha
Mix ghee, crushed carom seeds, asafoetida , salt and flour well and then make soft dough using water. Let it rest until we make the filling
Filling - mix sattu, 1/2 tsp ginger, lemon, mustard oil( smoked ), salt, onion seeds , 2 garlic cloves finely chopped,green chilli chopped, 25 g chopped onion, 1.5 tsp chopped coriander and salt.
Chokha- Roast Bringal, tomato, garlic and onion in oven or using gas( I did in oven). Then mash everything with boiled potato. Season it with salt, cumin powder and lemon juice.
Green chutney- grind coriander leaves, Mint leaves, remaining asafoetida, cumin powder, salt, green chilli and lemon juice to a smooth paste
Red chutney- Grind roasted tomato (100g) ,2 garlic cloves, red chilies ( as per taste) and salt to a smooth paste
Litti - divide the dough and filing into three equal parts.stuff the filling into the dough balls to make litti. Now bake them for 25-35 min at 180 C in a preheated oven.
