This is a multiple portion recipe. It makes for 4 portions of my macros. I use it along with my other carb options on my plan for week day lunch/ dinner. Seasoning mix used is same as the one in my Crispy chicken meal. I always make a large batch of this spice mix and have it handy. Any Store bought one works too. Meal ideas: 1. Pair it with steamed rice, green salad. 2. Use it as a filling for wrap/ tacos along with some yoghurt, lettuces, sauces

Ingredients

  • listcheck320 gm Chicken Breast Fillet
  • listcheck200 g Peppers
  • listcheck80 g Red Onion
  • listcheck75 g shredded Cheddar Cheese
  • listcheck2 tsp Seasoning Mix + 1/2 tsp oregano
  • listcheck10 g Ginger Garlic Paste
  • listcheckLow Cal cooking Spray
  • Method

  • Step-1
    Keep the oven for preheating for 10 mins. Chop the peppers, onions, chicken in the form of slices.
  • Step-2
    Now take a baking dish. Add in the sliced chicken along with ginger garlic paste,seasoning mix and oregano. Mix well and spread to cover the bottom of the dish.
  • Step-3
    Spray cooking oil. Now layer with chopped onions, peppers, cheese in that order.
  • Step-4
    Bake in the oven for 35-45 mins at 150-200. Check in between. Make sure all the water has evaporated. Sprinkle with chopped parsley/ cilantro. Now store this mix to use in meals or use immediately.
