While searching some recipes I found vegan Alfredo sauce recipe very much easy & different, only two ingredients, cauliflower & garlic But I was not sure it will have that sauce like consistency, so I added little wheat flour, and it turned out to be amazingly creamy sauce

Ingredients

  • listcheckAny raw pasta -40 g
  • listcheckVeggies for pasta - 50 g
  • listcheckCauliflower florets -50 g raw
  • listcheckGarlic pods chopped-2 pods
  • listcheckitalian seasoning
  • listcheckPepper powder
  • listcheckChilli flakes ( optional)
  • listcheckOliveOil-2 g
  • listchecksalt
  • listcheckRice flour/ wheat flour- 5 g

  • Method

  • Step-1
    For creamy cauli garlic sauce : In a pan brush 2 g oil
  • Step-2
    Add chopped garlic, stir and add cauliflower florets ( garlic should remain white , do not burn till brown )
  • Step-3
    add salt and little water.Cover with lid and cook till cauli is little tender
  • Step-4
    Cool and drain caulifower Grind in mixer with 5 g flour to form a smooth creamy paste
  • Step-5
    Cook this paste on a slow flame Add water if too thick , cosistancy should be that of white sauce
  • Step-6
    Add black pepper and adjust salt
  • Step-7
    For pasta : Boil 40 g raw pasta in water , add salt, drain and pour cold water Keep aside
  • Step-8
    Chop bell peppers,blanch broccoli or prepare any other veggies you like to add
  • Step-9
    Mix veggies,sauce and pasta Sprinkle Italian seasoning, pepper powder, chilli flakes( optional) Enjoy !!!!
