My love for biriyani is unbeatable. So whenever I am craving for it , I make it , pretty much out of any protein source ( chicken , fish , soya) . I use the same recipe for all of them

Ingredients

  • listcheckPaneer 200gms
  • listcheckRice 50gms
  • listcheckOnion15 gms
  • listcheckTomato 30 gms
  • listcheckGinger garlic paste 5 gms
  • listcheckYoghurt 15 gms
  • listcheckCloves 2
  • listcheckCinnamon 1 piece
  • listcheckCardamom 2
  • listcheckCaraway seeds 1/4 tsp
  • listcheckTurmeric a pinch
  • listcheckCoriander pwd 1/4 tsp
  • listcheckChilli pwd 1/4 tsp
  • listcheckGaram masala 1/4 tsp
  • listcheckAmachur a pinch
  • listcheckLemon juice few drops
  • Method

  • Step-1
    Boil rice with 1 clove ,1 cardamom , 1/2 cinnamon n caraway seeds . Remove n keep aside when 75% done .
  • Step-2
    In a small cooker , add ghee . When ghee is hot add the remaining clove , cardamom n cinnamon to it .
  • Step-3
    Add onions to it and sauté . When onions turn golden add in the ginger n garlic paste n sauté well till it leaves the raw smell
  • Step-4
    Add in the tomatoes and sauté till it is mushy . Add in few mint leaves .
  • Step-5
    Add in all masalas n sauté for about half a min then add yoghurt n mix nicely .
  • Step-6
    Then add paneer n mix .
  • Step-7
    Keeping this thick gravy as first layer , put the cooked rice as second layer . Sprinkle some water . Then close the lid n put the weight on . Keep the flame very low for ten min . Whistle won’t come as there is almost no water n the flame is also very low . This will work as dum . After ten min remove the lid n serve hot
