One of the first American forms of chicken salad was served by Town Meats in Wakefield, Rhode Island, in 1863. The original owner, Liam Gray, mixed his leftover chicken with mayonnaise, tarragon, and grapes. This became such a popular item that the meat market was converted to a delicatessen.

  • Step-1
    1Heat pan over medium to medium-high heat, grease with cooking spray or a drizzle of oil, and add your chicken breast (small size) to the pan. Cook for 10 to 15 minutes per side. Turn heat down if chicken begins to burn. 2 Prepare the chicken salad dressing in a large bowl. Mix together the mayonise, curd and lemon juice.and raw and chopped onion 3. Remove the chicken from the pan and Mix it in with the dressing and vegetables. 4 At this point you can make ahead. When ready to serve, fold in the sliced and chopped iceberg lettuce.
