I had to make something filling for lunch as my carbs with rice were reduced to 50 gms this week. Hence came up with this by shifting eggs from my breakfast to lunch.

Ingredients

  • listcheck50gms rice boiled
  • listcheck2 boiled eggs
  • listcheck10gms ghee
  • listcheck1 small onion
  • listcheck1 small tomato
  • listcheck2 garlic cloves
  • listcheck100 gms Spinach
  • listcheck1 teaspoon Ginger Garlic Paste
  • listcheck1 green chilli (hot)
  • listcheckSalt as per taste
  • Method

  • Step-1
    1 boil the rice and eggs and keep separately
  • Step-2
    Blanch the Spinach
  • Step-3
    Add the diced tomato, onion, garlic and blanched spinach to a blender and blend till its watery.
  • Step-4
    Heat a pan and pour ghee once heated
  • Step-5
    Add the blended mixture to the pan and add the salt.
  • Step-6
    Once the mixture starts boiling, prick eggs with a tooth pick making fine holes all over and add the eggs to the pan. Cook till it all blends.
  • Step-7
    Voila. Add it to the rice and enjoy.
