A very tasty one pot dinner. I usually save my carbs and fat for the day to enjoy this. Very easy to make and the recipe is very forgiving on the sauce/spices. Can adjust the oil and sauce according to the macros. It is a very taste way to incorporate fish in to your diet. I use the conversion 200 gm potatoes for 40 gm rice.

Ingredients

  • listcheckSalmon fillet - 120 gm
  • listcheckPotato-400 gm
  • listcheckOnion- 100 gm
  • listcheckOlive oil- 15 ml
  • listcheckHomemade Mayo- 5 ml
  • listcheckYogurt- 30 gm
  • listcheckPaprika- 1 tsp
  • listcheckRed chilli powder - 1 tsp
  • listcheckGarlic powder - 1/2 tsp
  • listcheckPepper powder - 1/2 tsp
  • listcheckSalt - as per taste
  • listcheckLemon - 1 tsp
  • listcheckSpring onion - a bunch
  • Method

  • Step-1
    Preheat the oven to 230 deg c.
  • Step-2
    Mix all the spices together and add 10 ml oil in to it.
  • Step-3
    Chop onion into big chunks and mix half of the spice mix into it. Put it in a baking tray and bake until it turns crispy.
  • Step-4
    Cut the potatoes as you would do for french fries. Rub it with 5 ml olive oil and enough salt.

    Take the onion out and spread potatoes in the same pan. Bake till the potatoes are cooked and slightly brown.
  • Step-6
    Rub the half of the rest of the spice mix on the salmon along with the lemon.
  • Step-7
    Take the baking tray out and top it with the already cooked onion. Place the marinated salmon on top and place the tray back in the oven.
  • Step-8
    After five minutes take the tray out. Use a fork to shred the salmon. Spread evenly over the tray. Mix some water in the remaining spice mix and pour over the salmon evenly.
  • Step-9
    Bake more 5-7 more minutes until salmon is cooked perfectly.
  • Step-10
    To make home made mayo- add an egg, 1 tsp vinegar, a pinch of salt and 2 pods of garlic in a blender. Now add sunflower oil little by little and pulse for 10 seconds. Keep on doing this until you get mayo of thick consistency. Might take around 100 ml oil. Keep the mayo in an airtight container in refrigerator.
  • Step-11
    Mix a teaspoon of homemade mayo, yogurt, salt, a pinch of black pepper and oregano with a little water. Pour the sauce over the baked salmon. Top it with the spring onion and serve hot!
