Ingredients

  • listcheckTomatoes : 1 Large
  • listcheckCoconut Oil : 1 tsp
  • listcheckEggs : 2
  • listcheckTuna in Brine : 80 g
  • listcheckOregano : a pinch
  • listcheckChilli Flakes : a pinch • Parsley : handful Chopped
  • Method

  • Step-1
    Peel the tomato and chop into cubes.
  • Step-2
    Heat the oil in a small frying pan, add the chopped tomato and fry over high heat for about 3 minutes.
  • Step-3
    Create 2 gaps in the tomato and break the eggs into them. Season with salt and pepper.
  • Step-4
    Arrange pieces of tuna on top, sprinkle with dried oregano and chilli flakes.
  • Step-5
    Fry for 3 more minutes or until the egg whites are cooked. 6. Serve with fresh parsley.
  • Step-6
    Tip: For a non-fish option replace tuna with feta.
