After having the chicken waldrof salad I became a fan of the flavor mainly because of the overpowering flavor of mustard. So decided to create it in a form of sandwich for my lunch today.. So here comes my version of it and I have replaced chicken with tuna! The recipe as follows with the macros! Canned tuna : 120 gms Apple (try to use the Granny Smith apple but I have used regular gala apple) : 40 gms thinly sliced Blanched spinach : 100 gms Greek yogurt : 40 gms (I make it at home and trust me you will never eat the store bought Greek yogurt again once you make them at home, they turn out to be very creamy) Corsely ground black mustard : approx 1 table spoon Chipotle sauch winggreen farm (I like their macros, one can fit them in their diet easily) : 10 gms Bread : 55 gms, 3 slices So for the filling mix tuna, apple, spinach, yogurt, mustard and Chipotle together (you don't need salt as canned tuna has pre added salt in it) and keep it in the fridge for half n hour at least, toast the bread and I kept them in the fridge as well. So now take them out, fill the bread and have it! It tastes yum! All I missed is the sourdough bread! I had it with cold coffee made with almond milk! I did not include the macros of greens and mustard. So we can eat fancy within our macros just by swapping few ingredients (I have skipped the Mayo and honey in this case)!
