Ingredients

  • listcheckMiso Paste Sachets : 2 packs
  • listcheckGinger : small piece (chopped)
  • listcheckGarlic cloves : 2 pieces (Peeled and sliced)
  • listcheckSoba Noodles : 45 g
  • listcheckSugar snap peas : 50 g
  • listcheckAsparagus Stems : 8 pieces (Sliced)
  • listcheckCourgette : 1 (spiraled into noodles)
  • listcheckTenderstem Broccoli : 100 g
  • listcheckYellow Pepper : 1 (sliced)
  • listcheckOrange Pepper : 1 (sliced)
  • listcheckCoriander leaves : 20 g
  • Method

  • Step-1
    Pour 600 mL boiling water into a pan, add miso, ginger and garlic. Allow to gently simmer for 3-4 minutes.
  • Step-2
    Add soba noodles and vegetables to pan, and cook for a further 3-4 minutes, until just tender
  • Step-3
    Stir through the soy sauce and ladle into warm bowls. (Garnish with coriander leaves to serve)
