Ingredients

  • listcheck1 cup raw cashew nuts (140 g)
  • listcheck1 cup almonds (165 g)
  • listcheck1 cup sunflower seeds (150 g)
  • listcheck2 cups dried dates (300 g)
  • listcheck1 cup dried currants (170 g)
  • listcheck1 tsp vanilla essence (5 g)
  • listcheck1/2 cup desiccated coconut (38 g)
  • Method

  • Step-1
    Process the nuts & seeds in a large food processor bowl until finely chopped (maybe in batches so you don't overheat the food processor)
  • Step-2
    Add the dates, currants and vanilla essence and process until almost smooth and sticky
  • Step-3
    Roll into 30 small balls & coat with coconut
  • Step-4
    There should be enough moisture from the fruit & nuts to bind everything,  but if not, add a tbsp of water
  • Step-5
    Makes 30 - macros are per ball
