Ingredients

  • listcheck50 gm rice
  • listcheck40 gm Dark Red Kidney beans/ Rajma
  • listcheckOnion Half
  • listcheckBell pepper green half
  • listcheckBell pepper red half
  • listcheckBell paper yellow half
  • listcheckGhee 5 gm
  • listcheckOregano
  • listcheckSalt to taste
  • listcheckRed chili powder
  • listcheckChili flakes
  • listcheckCumin powder
  • listcheckGarlic 2 cloves
  • listcheckCilantro
  • listcheckLemon Juice
  • listcheckYogurt Optional
  • Method

  • Step-1
    For rice. I cooked my 50 gm rice in a microwave boiled rice with salt and bay leaf.
  • Step-2
    When cooked add cilantro and half teaspoon lemon juice mix well.
  • Step-3
    For Rajma. When well cooked add crushed garlic, oregano, salt, red chili powder and cumin powder let it simmer for 15 min covered.
  • Step-4
    For veggie topping. Add 5 gm butter/ghee. Add onion and all the bell peppers and stir fry them for about 5-7 min until tenderly crisp. Add oregano, salt , black pepper, chili flakes.
  • Step-5
    Assemble. Add cilantro lemon rice. Add cooked kidney beans.Add stir veggies. You can add a topping of yogurt if it's a part of your meal, or you can serve it with avocado or guacamole.
