Gluten & dairy free, low carb, high protein brekky

Ingredients

  • listcheck1 large tomato
  • listcheck1 tsp coconut oil
  • listcheck2 eggs
  • listcheck80g tuna in brine
  • listchecka pinch of oregano
  • listchecka pinch of chilli flakes
  • listcheckparsley, chopped, to serve
  • Method

  • Step-1
    Peel the tomato and chop into cubes
  • Step-2
    Heat the oil in a small frying pan, add the chopped tomato and fry over a high heat for about 3 minutes
  • Step-3
    Create 2 gaps in the tomato and break the eggs into them. Season with salt and pepper
  • Step-4
    Arrange pieces of tuna on top. Sprinkle with dried oregano and chilli flakes
  • Step-5
    Fry for a further 3 minutes or until the egg whites are cooked. Serve with fresh parsley

    Serves: 1

    Tip: for a no-fish option, replace tuna with feta
