Ingredients

  • listcheckAlmonds : 100 gm
  • listcheckWeetbix : 4 pieces
  • listcheck1 Banana : 1 large (chopped)
  • listcheckFresh Medjool Dates: 200 gm
  • listcheckVanilla extract : 1 tsp
  • listcheckDesiccated Coconut: 5 tbsp
  • Method

  • Step-1
    Process the almonds in a food processor until finely chopped.
  • Step-2
    Add Weetbix, bananas, date, vanilla and 2 tbsp of coconut
  • Step-3
    Process until combined.
  • Step-4
    Roll heaped tbsp of the mixture into balls.
  • Step-5
    Spread remaining coconut on a plate and roll balls lightly in coconut to coat.
  • Step-6
    Store in airtight container in the fridge for up to 3 days.
  • Step-7
    Note: Makes 20 balls of the batter.
