Got a craving to have hash browns with your eggs in the morning? Why not make your own, and kick the flavour up a notch with these sweet potato bacon cakes! The sweet potato is cooked first to bring out their natural sweetness and then mixed with just a few ingredients. Takes 10 mins to prepare, 20 mins to cook. Makes 4 ... macros are per cake.

Ingredients

  • listcheck450 gms boiled or steamed sweet potato
  • listcheck100 gms bacon diced
  • listcheck3 shallots (spring onions)
  • listcheckI egg
  • listcheckSalt and cracked black pepper

  • Method

  • Step-1
    Boil or steam peeled sweet potato until tender. Place in large mixing bowl and mash.
  • Step-2
    Spray frying pan with oil of choice and lightly sauté bacon and shallots. Add to sweet potato and mix to combine.
  • Step-3
    Finally, add egg, and season with salt and pepper to taste, and mix.
  • Step-4
    Divide sweet potato mix into 4. Shallow fry in oil of your choice until crispy on the outside but soft in the middle. Sit on absorbent paper towel if necessary after cooking to soak off any excess oil.
