Brekky on the go with coffee, morning or afternoon tea, snacks while travelling or hiking...make it yourself easy in a food processor and know exactly what you are eating! I keep mine in the freezer & they last for ages ☺️

Ingredients

  • listcheck100gm Almonds
  • listcheck4 Weetbix
  • listcheck1 large ripe banana, chopped.
  • listcheck200gms fresh medjool dates, pitted, chopped.
  • listcheck1 teaspoon vanilla extract
  • listcheck5 tablespoons desiccated coconut
  • Method

  • Step-1
    Process the almonds in a food processor until finely chopped. Add weetbix, banana, date, vanilla and 2 tablespoons of the coconut. Process until combined. Roll heaped tablespoons of the mixture into Balls. Spread remaining coconut on a plate and roll balls lightly in coconut to coat. Store in airtight container in the fridge for up to 3 days. makes 20 Balls.
