I forgot to take a picture of these and so the picture here has been taken off Google for representation (and because the app wouldnt let me post this without a pic) - but they were oh so perfect! These are great for a snack or as a side with your grilled paneer! Mushrooms: 200g Garlic: 4 cloves Paneer: 50g Cheese: 1 cube of amul cheese Salt and pepper Olive oil: one tsp Wash your mushrooms well. Gently remove the stem and put it aside for later use. To remove the stem, you simply have to firmly hold and twist it, it will come loose. You will now have full mushroom cups. Now, chop the leftover stems as finely as possible. In a pan, heat some olive oil and saute finely chopped garlic in it. Add the chopped stems and cook for 2-3 minutes on medium flame. Next, add crumbled paneer and salt and pepper and mix well. At this stage, you can add in more herbs or seasoning to this stuffing if you wish. If not, turn off the flame and set it aside. Let the stuffing cool down. Once cool, add grated cheese into it and mix well. You can also grate one more clove of raw garlic to it if you like. Stuff the mushroom cups with this stuffing and seal it will with your hands. Now heat a pan and put the mushrooms, stuffing-side-down. After about 30 seconds, flip the mushrooms and cook- this helps to seal the juices inside. Cover the pan and cook for 4-5 minutes. Add some salt and pepper and cook until done. Serve!
