Palak(Spinach) chicken - had it last night for dinner along with a side of cucumber, onion and carrot salad. Today for lunch - just added biryani masala, rice and water to it and turned into biryani. Quick and easy satisfying lunch. Had it with 1 cup plain unsweetened Greek yogurt. Meal prep - cut chicken, weigh and pack it into individual serving size. Wash and cut spinach and keep it ready.
