Ingredients: Paneer - 200 g (crumbled) Milk - 120 ml Coconut flour - 40 g Brown sugar - 60 g Baking powder - ½ tsp Pinch of salt Dried figs - 7-8 Butter - ½ tsp (to grease the pan) Whole eggs - 2 Method: 1.In saucepan simmer figs in milk on a low flame. 2. Take it off the flame and keep it aside to cool down. This will impart a slight fig flavour to the milk. 3. Grease a 6 inch round pan with butter. 4. In a big clean bowl, take the eggs and add sugar to it. Beat it with a hand mixer till its fluffy. 5. Add coconut flour, salt, baking powder, crumbled cottage cheese and beat everything till well incorporated. 6. Preheat oven to 200°C. 7. Take the soaked figs out of the cooled milk and add the milk to the batter. 8. Whisk the batter well. The consistency of the batter will be thick like a paste. 9. Now add chopped soaked figs and stir in the batter or just place them on top. 10. Bake for 35 min. Check the doneness by inserting a toothpick. If it comes out clean the cake is baked.
