I am always looking for fuss free easy meal options, especially for my lunch because cooking for just one person sometimes feels like a hassle. To add, if the meal can be made in just one pan/pot even better, less dishes to do 🙂. Also cooking everything together, means more volume. This plays with the mind that you are having more food. Fuss free, One pot - Spinach Chicken Rice 150gm frozen spinach (you can use fresh) 150gm chicken breast, chopped 35gm rice 1tbsp tomato onion paste (I make in bulk for the entire week and refrigerate) 1/2tsp Ginger garlic paste Salt and spices as per your preference 100gm water I didn't use any ghee since my tomato onion paste already has ghee. If you are making the paste fresh, use ghee as per your macros. Add frozen spinach, tomato onion paste, ginger garlic paste and all spices in a pan. Let it come to a simmer and let the spinach thaw. Add in rice once the spinach has thawed and cover. Add in chicken when the rice is half done. Cover and let it cook till the water evaporates and both the rice and chicken are cooked. You can replace the chicken with your choice of protein - paneer/soya chunks/tofu. C : 27 P : 46 F : 10
