Ingredients: 4 eggs 1 tbsp oil Musters seed 100gm chopped onion 1 tomato Ginger garlic paste and salt (as per taste) Masala: paprika, turmeric, garam masala and fennel powder. Curry leaves (for tadka and garnishing) Method: Hard boil 4 eggs and let cool under ice cold water. Once done, remove the shell and make deep gashes on them. Keep aside. For masala: Heat a tbsp of coconut oil and splutter mustard seeds. Add 100 gms of chopped onion and a handful of curry leaves and saute till golden brown. To this, add ginger garlic paste and salt. Once the raw smell goes, add paprika, turmeric, garam masala and fennel powder. Once they are roasted well, add a tbsp of tomato paste and half a tomato chopped and cook till mushy. Add about a half a cup of water and allow the gravy to come together. Tip in the boiled eggs and cook covered for 5 mins. Turn off the stove and add a couple of curry leaves and a sprinkle of fennel powder. Serve warm with roti. Credit Pam Anish Varghese
