Good Morning Healthy People, Khandavi... One of the most popular farsan or snacks from Gujarat. Has similar macros to all other grains/millets like Ragi, Rice, Bajra, Wheat, etc... yet high in protein compare to others.. For Khandavi you need.... 1 cup Besan (gram flour) 3 cup Buttermilk (little bit sour) Or 1/2 cup thick curd 21/2 cup buttermilk Salt Turmeric powder asafoetida Salt 1 tsp oil... Method... *i prefer to roll Khandavi on kitchen platform, so clean and grease the platform. *alternatively you can use any plates too.. *keep it aside.. *In a large mixing bowl add besan buttermilk, salt, turmeric powder and asafoetida and oil... *mix everything thoroughly.. *now preferably take nonstick pan and cook this mixture for around 5-7 minutes on medium heat.. *make sure to stir in one directions only to avoid any lumps.. *once the mixture starts leaving the pan, turn off the heat n take a little bit of it and roll on the surface. *let it sit for few seconds n try to roll, if comes out easily means Khandavi is ready.. * if not cook for one or two minutes more. * now make sure to do next process quickly n roll/spread it evenly on greased surface.. *at this stage either roll simply or you can give some twist n already green chutney, schezwan chutney, pizza sauce etc to the spread before you roll out and can top up with cheese too.. *so Chinese, Italian etc twist of flavour you can choose.. *i have kept it traditional n gave a tadka of curry Patta, mustard seeds, chilli, sesame seeds...sprinkle red chilly powder, coriander and fresh coconut on top.. *Very tasty lip smacking Khandavi is ready..
