Stir fried tofu with grilled white asparagus
Preparation time: 20 mins Cooking time: 20 mins Ingredients: Tofu - 225 gm Red bell pepper - 100 gm White asparagus - 100 gm Garlic - 5 gm Ginger - 5 gm Lemon juice - as per taste 1. First, peel the asparagus and discard their woody ends. Cut them in two halves and keep aside. 2. Take a little amount of olive oil in a pan and add asparagus along with salt and pinch of black pepper powder. 3. Cover the pan, wait for 5-7 mins and then turn them around. Also add lemon juice as per your taste. 4. Asparagus will start leaving it's water so cook it on high falme. Once they are cooked, remove them in the plate and keep aside. 5. In the same pan, put garlic and ginger. Stir for a minute. 6. Add chopped bell pepper and again stir for another 2 mins. 7. Add salt and a pinch of pepper powder. 8. Add tofu cubes and stir. Sides: Rucola and Cherry tomatoes Note: You can also grill asparagus in the oven by brushing them with oil and salt. Use bell pepper (red/ yellow) and asparagus (white/ green) of your choice.
